Grilled pineapple and Speck Sandwich with Fresh Mozzarella and Zucchini Flowers
Here is the recipe for my “panino solidale” created in the occasion of a charitable event organized by Panini Durini and HUG – Tap to donate. Myself, Roberta Castrichella of Robysushi, e Ilaria Vita from Pepite per tutti faced off to create the best sandwich to be judged by a jury of food journalists. It was a tough competition, but in the end my sandwich, “Tropical Hug,” took home the gold. You will find my sandwich on sale at the Panini Durini stores for the month of July, and one euro from each sale will be go the organization Associazione CAF, which cares for disadvantaged youth.
“Tropical Hug”: Grilled pineapple and Speck Sandwich with Fresh Mozzarella and Zucchini Flowers
- 2 slices of bread
- 3 zucchini flowers
- 2 slices of pineapple, peeled
- 4 slices of Speck (smoked, cured ham)
- 4 slices of fresh mozzarella
- finely-chopped pistachios
Heat a grill pan over a high flame. Wash the zucchini flowers, removing the stem and the pistil Lightly brush the zucchini flowers and pineapple slices with olive oil, then set on the grill. Only slightly grill the zucchini flowers, about 1 minute per side, but let the pineapple grill for several minutes per side, until dark grill marks form and the slices soften.
Toast both slices of bread with a the mozzarella slices on top, until the bread is toasted and the cheese is slightly melted. Assemble the sandwich with the speck, grilled zucchini flowers and pineapple, and the finely chopped pistachios. Serve immediately,
